I discovered that I was gluten intolerant back in 2012, and since then, I had been in search of the perfect gluten free cookie which to me was just a perfect cookie--dense, gooey, decadent--a cookie that I'd be ecstatic to share with my non gluten free friends and family just as much as my gluten free friends and family. After years of searching, I realized that I just needed to make this cookie myself. This business is the result of all those years of trial and error, of failure, of discontent and frustration in a 9-5 job, of returning to the kitchen over and over again as a means to create and spread joy.
In so many ways, baking has always represented hope for me. This business, however, represents so much more. It's proof that those crazy dreams you have can come true as long as you're crazy enough to never give up on them.
So these cookies are for you--for all of my fellow poets, dreamers, risk-takers, and big planners.
